Directions
Fries: Preheat the oven to 220C fan bake and line a large baking tray. Slice 3 medium potatoes into thin fries and toss with 1 tbs olive oil and 1 tsp salt. Spread across the tray in a single layer and bake for 30-35 minutes, flipping halfway, until golden and crispy.
Caramelised onions: Slice 1 onion into rings and add to a pan with 1 tbs butter over medium-low heat. Cook slowly for 15-20 minutes, stirring occasionally until golden and soft. Add 1 tsp brown sugar and a splash of water and stir until caramelised. Set aside.
Patties: Add 300g beef mince to a bowl with 1 tsp salt, 1 tsp pepper and 1 tsp garlic powder. Mix well and form into 2 patties, slightly wider than your bun. Heat a large pan to high heat and add 1 tsp canola oil. Cook patties for 3-4 minutes per side until cooked through. Add 2 slices of cheese to each patty in the last minute and let melt.
Bacon: In the same pan, cook 4 rashers of bacon until crispy.
Assemble: Toast the brioche buns. Spread aioli on both sides then layer with lettuce, sliced tomato, avocado, the cheesy patty, bacon and caramelised onions. Serve with fries.
