Spicy Satay Wontons

Ingredients
1 cup rice
3 tbs smooth peanut butter
2 tbs chilli oil
2 tbs soy sauce
2 tsp rice wine vinegar
2 tsp crushed garlic
1 tsp sugar
2 bok choi
½ small cucumber
12 frozen wontons
Crushed peanuts, optional

Directions
Rice: Cook 1 cup of rice.
Sauce: Grab a blender and add 3 tbs smooth peanut butter, 2 tbs chilli oil, 2 tbs soy sauce, 2 tsp rice wine vinegar, 1 tsp sugar and ¼ cup hot water. Blitz into a smooth sauce, adding another splash of water if needed.
Vegetables: Quarter 2 bok choi and soak in a bowl of boiling water for 3 minutes. Finely slice ½ small cucumber and set aside.
Wontons: Cook wontons as per packet instructions
Assemble: Scoop rice into a bowl, top with bok choi, wontons and drizzle over the satay sauce. Top with cucumber, extra chilli oil and crushed peanuts, if preferred.
