Bacon & tomato tortellini

Ingredients
100g bacon
300g tortellini/ravioli
1 tin tomato puree
1 tsp salt
1 tsp pepper
1 tsp mixed herbs
1 tsp sugar
Tiny pinch baking soda
1 cup baby spinach
20g grated parmesan cheese

Directions
Cook bacon: Slice bacon into small pieces and add to a cold pan. Bring up to medium heat, and let the bacon cook while only stirring occasionally, until it is crispy. Remove from the pan, but keep the pan on.
Tortellini: Bring a large pot of water to a boil and cook tortellini as per packet instructions.
Sauce: Add 1 tin of tomato puree to the bacon pan, along with 1 tsp salt, 1 tsp pepper, 1 tsp mixed herbs, 1 tsp sugar and a tiny pinch of baking soda. Mix well and bring to a gentle boil.
Bring together: Once tortellini has cooked, add to the tomato sauce and add 1 cup baby spinach. Combine together, and serve with grated parmesan and cooked bacon.
