BBQ bacon bowls

Ingredients
2 medium potatoes
2 tsp olive oil
2 tsp paprika
2 tsp garlic powder
1 tsp onion powder
2 tsp salt
1 small lettuce
1 tomato
1 avocado
1 onion
1 tsp brown sugar
2 slices bacon
200g beef mince
2 tbs tomato sauce
1 tsp pepper
4 tbs bbq sauce
Sesame seeds

200g beef mince
2 tbs tomato sauce
1 tsp pepper
4 tbs bbq sauce

Directions
Potatoes: Preheat the oven to 200C fan bake and line a large baking dish. Peel and dice potatoes into 2cm cubes, lay on the tray and season with 1 tsp olive oil, 1 tsp paprika, 1 tsp garlic powder, 1 tsp onion powder and 1 tsp salt. Mix well, and cook for 30 minutes, flipping halfway.
Get prepped: Dice 1 small lettuce head, 1 tomato, 1 avocado and 1 onion. Heat a small pot to medium heat, add 1 tsp olive oil and the diced onions. Sautee for a few minutes, then add ½ tsp salt and 1 tsp brown sugar. Cook for a further 3 minutes, until the onions are soft and starting to caramelise.
Bacon & mince: Heat a large pan to medium-high heat and add 2 slices of bacon. Cook until slightly crispy, then remove. Keep the pan on. Add 200g beef mince to the pan and season with 2 tbs tomato sauce, 1 tsp paprika, ½ tsp salt, 1 tsp garlic powder and 1 tsp pepper. Cook for 8-10 minutes, stirring frequently, until cooked.
Serve: Plate up cooked potatoes, top with lettuce, tomato, avocado, mince, grated cheese, sliced onion and bacon. Finish with a good squeeze of bbq sauce, and a sprinkle of sesame seeds.
