Beef Burgers w/ Avocado, Red Onion & Corn Slaw

Ingredients
250g beef mince
2 tsp salt
1 tsp pepper
½ cup frozen corn
⅓ cabbage
1 small red onion
¼ cup mayonnaise
1 lime

Directions
Patties: Grab a large bowl and combine 250g beef mince with 1 tsp salt and 1 tsp pepper. Form into two thin patties. Set aside.
Slaw: Heat a small pot to high heat and add ½ cup frozen corn. Cook for 3-4 minutes, until the edges begin to char. Remove and add to a bowl. Shred ⅓ cabbage and 1 small red onion, and add to the corn. Mix in ¼ cup mayonnaise, juice of 1 lime and 1 tsp salt. Set aside.
Cook: Heat a large pan to high heat and add 2 tsp canola oil. Once hot, add the patties and use the back of a spatula to ‘smash’ the patties to create crispy edges. Cook for 1-2 minutes, then flip. Add 10g cheese to each patty and let it melt. Remove the patties, and slice the buns in half then add to the pan to crisp up.
Serve: Layer patties with beef, sliced avocado and slaw. Enjoy immediately.
