Ingredients
200g dried flat rice noodles
300g beef sirloin or flank steak
2 tbsp soy sauce
1 tbsp oyster sauce
1 tbsp dark soy sauce
1 tbsp cornstarch
2 tsp sesame oil
2 tbsp vegetable oil
3 tsp crushed garlic
1 bunch broccolini
1 cup bean sprouts
3 spring onions
Salt and pepper
300g beef sirloin or flank steak
2 tbsp soy sauce
1 tbsp oyster sauce
1 tbsp dark soy sauce
1 tbsp cornstarch
2 tsp sesame oil
2 tbsp vegetable oil
3 tsp crushed garlic
1 bunch broccolini
1 cup bean sprouts
3 spring onions

Directions
Noodles: Soak 200g dried flat rice noodles in boiling water for 8–10 minutes until just pliable but not fully soft. Drain and set aside.
Beef: Slice 300g beef as thinly as possible against the grain. Toss with 1 tbsp soy sauce, 1 tbsp cornstarch, and 1 tsp sesame oil. Leave to marinate for 10 minutes.
Sauce: Mix together 1 tbsp soy sauce, 1 tbsp oyster sauce, 1 tbsp dark soy sauce, and 1 tsp sesame oil. Set aside.
Cook: Heat 2 tbsp vegetable oil in a wok or large pan over very high heat until smoking. Add the beef in a single layer and cook for 1–2 minutes without touching until browned. Remove and set aside. In the same pan, add 3 tsp crushed garlic and stir for 30 seconds. Add the broccolini and toss for 2 minutes. Add the noodles and pour the sauce over. Toss everything together over high heat for 2 minutes. Add the beef back in along with 1 cup bean sprouts and toss for 1 minute more.
Serve: Pile into bowls and top with sliced spring onions.
