Beef pepper lunch

Ingredients
1 cup jasmine rice
300g beef sirloin or scotch fillet
1 onion
1 cup frozen corn
2 tbsp soy sauce
1 tbsp oyster sauce
1 tbsp butter
1 tsp cracked black pepper
1 tsp sesame oil
2 spring onions

Directions
Rice: Cook 1 cup rice according to packet instructions. Keep warm.
Beef: Slice the beef as thinly as possible (pop it in the freezer for 15 minutes first to make slicing easier). Season well with cracked black pepper.
Sauce: Mix together 2 tbsp soy sauce, 1 tbsp oyster sauce, and 1 tsp sesame oil. Set aside.
Cook: Heat a large pan over high heat until smoking. Add 1 tbsp butter. Thinly slice 1 onion and cook for 3–4 minutes until starting to soften. Push to the side, add the beef slices in a single layer and cook for 1–2 minutes without touching until browned. Add 1 cup frozen corn and toss everything together. Pour the sauce over and toss for 1 minute.
Serve: Spoon rice into bowls, pile the beef and veg on top and finish with sliced spring onions and extra cracked black pepper.
