Directions
Marinade: In a bowl, place 300g steak and add 4 tsp crushed garlic, 1/2 cup orange juice, juice of 2 limes, 1 tsp salt and 1/4 cup olive oil. Mix well and set aside for 5-10 minutes.
Fries: Preheat the oven to 200º C fan bake. Rinse and chop 3 large potatoes into thin fries. Coat with 1 tsp salt, 1 tsp pepper and 2 tsp olive oil. Add to a lined baking tray and cook for 30-35 minutes, flipping halfway, until crispy.
Prepare sides: Mash 1 avocado in a bowl. Dice 1 tomato, 1 small onion, and 1/2 cucumber into similar-sized pieces to prepare the salsa. Add to another bowl and drizzle with 3 tbs lime juice, 1 tsp salt and 1 tsp sugar. Taste & adjust seasoning if needed. Set aside.
Cook steak: When fries have 10 minutes left, heat a large pan to a high heat. Cook the steak for 3-4 minutes per side, depending on how thick the steak is. Remove and let the meat rest, then slice.
Finish off: Once fries are cooked, turn the oven to grill on the highest setting. Sprinkle 50g grated cheese over the fries and return to the oven for 2-3 minutes to melt. Once cheese has melted, assemble the fries by piling up the chopped steak, salsa and mashed avocado. Sprinkle over 50g feta cheese. Enjoy!
