Chilli salmon w/ mango salsa

Ingredients
2 salmon fillets
1 tsp smoked paprika
1 tsp cumin
1 tsp chilli powder
½ tsp garlic powder
1 tsp salt
1 tsp olive oil
1 cup white rice
¼ cabbage
1 mango
1 avocado
1 lime
½ tsp sugar
½ tsp salt
Small handful fresh coriander
1 tsp smoked paprika
1 tsp cumin
1 tsp chilli powder
½ tsp garlic powder
1 tsp salt
1 tsp olive oil
1 cup white rice
¼ cabbage
1 mango
1 avocado
1 lime
½ tsp sugar
½ tsp salt
Small handful fresh coriander
Directions
Rice: Cook 1 cup white rice as per packet instructions.
Salmon: Preheat the oven to 200C fan bake and line a baking tray. Mix 1 tsp smoked paprika, 1 tsp cumin, 1 tsp chilli powder, ½ tsp garlic powder and 1 tsp salt together. Dice 2 salmon fillets into small cubes and coat with 1 tsp olive oil and all the spice blend. Bake for 12-15 minutes until cooked through.
Salsa: Dice 1 mango and 1 avocado and add to a bowl. Finely chop a small handful of coriander and add along with juice of 1 lime, ½ tsp sugar and ½ tsp salt. Mix gently and set aside.
Cabbage: Finely shred ¼ cabbage and set aside.
Serve: Spoon rice into bowls and top with shredded cabbage, salmon and a generous scoop of mango avocado salsa.
