Coriander lime steak tacos

Ingredients
2 pieces of steak
1 tsp olive oil
1 tsp crushed garlic
1 lime
2 tsp salt
1 avocado
½ cup frozen corn
1 small red onion
1 handful coriander
3 tbs canola oil

Directions
Steak: Marinade the two pieces of steak in 1 tsp olive oil, 1 tsp crushed garlic, juice and zest of 1 lime and 1 tsp salt. Mix well and set aside.
Vegetables: Slice 1 avocado and set aside. Heat a small saucepan and add ½ cup frozen corn. Heat for 4-5 minutes while stirring frequently until the corn begins to char. Make a salsa by finely dicing 1 small red onion and combining with the juice of 1 lime, 1 tsp salt and 1 handful of chopped coriander.
Cook steak: Bring a large pan to high heat and add 3 tbs canola oil. Cook steaks for 2-3 minutes per side, until cooked to desired level. Remove from the heat and let rest for 2 minutes.
Assemble: Heat the tacos by warming in the microwave or on a pan. Sprinkle with grated cheese and top with steak and avocado. Finish with red onion salsa and sliced avocado. Serve with sour cream and corn on the side.
