Courgette, pea & feta salad

Ingredients
5 pieces streaky bacon
1 courgette
1 onion
1 tsp olive oil
1 tsp garlic powder
1 tsp salt
1 tsp pepper
1 cup orzo
1 cup frozen peas

100g feta

20g parmesan cheese

Directions
Roast vegetables & bacon: Preheat the oven to 210C fan bake and line a large baking tray. Lay 5 pieces of bacon on half of the tray. Finely slice 1 courgette and 1 onion and spread over the other half of the tray. Season the vegetables with 1 tsp olive oil, 1 tsp garlic powder, 1 tsp salt and 1 tsp pepper. Bake for 20 minutes, flipping everything halfway.
Orzo: When the vegetables have around 5 minutes remaining, cook 1 cup of orzo as per packet instructions.
Finish off: Defrost 1 cup of peas in the microwave by warming for 2 minutes at a time until hot. Add peas, cooked orzo and the zest of 1 lemon to a large bowl. Add the cooked vegetables, and dice the bacon then add to the bowl. Sprinkle 100g feta over and add a handful of fresh herbs (dill or mint would go perfectly, if using). Mix everything together and taste, adding more lemon or salt/pepper if needed.
Serve: Plate up in bowls and top with parmesan cheese.
