Crispy halloumi power bowl

Ingredients
2 cups kale
3 tsp olive oil
1 avocado
⅓ cucumber
200g halloumi
2 tbs hummus
2 tbs sesame seeds
3 tbs mixed toasted nuts
2 tbs chilli oil
2 tbs honey mustard dressing (or whatever dressing you prefer)

Directions
Vegetables: Rinse and chop kale into small bite sized pieces. Add to a bowl and drizzle over 2 tsp olive oil. Massage the kale for 2-3 minutes to break down the fibres. Slice 1 avocado and set aside. Slice ⅓ cucumber and set aside.
Halloumi: Heat a pan to medium heat and add 1 tsp olive oil. Slice halloumi into 1cm thick slices and cook for 3-4 minutes per side.
Assemble salad: Add kale to 2 bowls and top with 1 heaped spoonful of hummus. Top with sliced avocado, cucumber and sprinkle with sesame seeds. Add toasted nuts and halloumi, and finish with a drizzle of chilli oil and honey mustard dressing.
