Eggplant, hummus & meatball spread

Ingredients
1 eggplant
3 tsp salt
2 tsp pepper
1 tsp olive oil
200g beef mince
½ cup breadcrumbs
1 egg
1 tsp paprika
1 tsp mixed herbs
2 tsp crushed garlic
1 small cucumber
1 cup baby spinach
½ cup greek yogurt
1/2 cup hummus
4 pita breads
3 tsp salt
2 tsp pepper
1 tsp olive oil
200g beef mince
½ cup breadcrumbs
1 egg
1 tsp paprika
1 tsp mixed herbs
2 tsp crushed garlic
1 small cucumber
1 cup baby spinach
½ cup greek yogurt
1/2 cup hummus
4 pita breads
Directions
Eggplant: Dice 1 eggplant into 1cm cubes. Preheat the oven to 180C fan bake and line 2 large baking trays. Add the diced eggplant to one of the trays, season with 1 tsp salt, 1 tsp pepper and 1 tsp olive oil. Bake eggplant for 15-20 minutes.
Meatballs: Grab a large bowl and combine 200g beef mince with ½ cup breadcrumbs, 1 egg, 1 tsp salt, 1 tsp pepper, 1 tsp paprika, 1 tsp mixed herbs and 2 tsp crushed garlic. Roll into small balls and lay on the other baking sheet. Bake for 15-20 minutes, flipping halfway.
Vegetables: Dice ½ small cucumber into 1 cm cubes. Roughly chop 1 cup of baby spinach. Grate the other half of the cucumber and add 1 tsp salt, then squeeze out any excess liquid. Add to a bowl and add ½ cup greek yogurt, 1 tsp crushed garlic and mix well.
Assemble: Splat 1/2 cup hummus on a platter, top with eggplant and meatballs, then cucumber and spinach, and finish with cucumber yogurt sauce. Enjoy with warm pita bread on the side.
