Fish Tacos w/ Cabbage & Pineapple Salsa

Ingredients
1 tsp paprika
1 lime
2 tsp olive oil
1 tsp salt
1 tsp pepper
2 fillets of white fish
125g pineapple pieces
1 capsicum
1 handful coriander
½ small cabbage
½ cucumber
4 small tortillas
3 tbs tartare sauce

Directions
Fish: In a small bowl, mix 1 tsp paprika, zest of 1 lime, 2 tsp olive oil, 1 tsp salt, and 1 tsp pepper. Rub over fish. Set aside.
Salsa & veg: Drain pineapple and add to a bowl. Finely dice 1 capsicum, 1 handful coriander and add to the pineapple. Squeeze 1 lime over and toss together. Shred ½ small cabbage and dice ½ cucumber. Set these all aside.
Cook fish: Heat a pan to high heat. Fry fish for 2-3 minutes per side.
Finish off: Heat tortillas in a dry pan. Fill with cabbage, cucumber, fish, salsa and a drizzle of tartare sauce.
Salsa & veg: Drain pineapple and add to a bowl. Finely dice 1 capsicum, 1 handful coriander and add to the pineapple. Squeeze 1 lime over and toss together. Shred ½ small cabbage and dice ½ cucumber. Set these all aside.
