Garlic parm chicken & caesar salad

Ingredients
1 large chicken breast
1 tsp olive oil
1 tsp garlic powder
0.5 tsp salt
1 tsp paprika
1 tsp cajun seasoning
4 tbs butter
1 tbs dried oregano
1 tbs crushed garlic
¼ cup grated parmesan cheese
1/2 cup mayonnaise
3 tbs olive oil
3 tbs lemon juice
2 tsp dijon mustard
2 tsp Worcestershire sauce
1 tsp crushed garlic
Salt & pepper
1 baby cos lettuce
1 avocado
1 tsp olive oil
1 tsp garlic powder
0.5 tsp salt

1 tbs crushed garlic
¼ cup grated parmesan cheese
1/2 cup mayonnaise

1 baby cos lettuce

Directions
Caesar salad: Combine ½ cup mayo, 3 tbs olive oil, 3 tbs lemon juice, 2 tsp mustard, 2 tsp Worcestershire sauce, 1 tsp garlic, 1 tsp salt & pepper in a blender. Roughly chop 1 baby cos lettuce and 1 avocado. Add to a bowl and cover with the dressing, then set aside.
Chicken: Preheat the oven to 200º C fan bake and line a baking tray. Chop 1 large chicken breast into large chunks. Add to a bowl and season with 1 tsp olive oil, 1 tsp garlic powder, 0.5 tsp salt, 1 tsp paprika and 1 tsp cajun seasoning. Thread onto skewers. Place skewers on the oven tray and cook for 15 minutes, flipping halfway.
Garlic butter: Gently melt 4 tbs butter then add to a bowl. Add 1 tbs dried oregano, 1 tbs crushed garlic and ¼ cup grated parmesan cheese. Every 5 minutes, brush the butter over the chicken in the oven.
Serve: Once chicken has cooked, remove from the oven and slice into chunks. Add to the caesar salad. Pour over any remaining garlic butter. Toss gently and enjoy!
