Greek Loaded Hummus

Ingredients
1 large eggplant
4 tsp olive oil
3 tsp salt
2 tsp pepper
200g beef mince
1 tsp crushed garlic
1 tsp oregano
1 tsp cumin
⅓ cucumber
1 tomato
½ block feta
1 cup hummus
1 tsp paprika
Fresh mint leaves
2 large flatbreads/wraps
4 tsp olive oil
3 tsp salt
2 tsp pepper
200g beef mince

⅓ cucumber
1 tomato
½ block feta
1 cup hummus
1 tsp paprika
Fresh mint leaves
2 large flatbreads/wraps
Directions
Eggplant: Heat the oven to 200ºC fan bake and line 2 baking trays. Slice 1 large eggplant into cubes, and toss with 1 tsp olive oil, 1 tsp salt and 1 tsp pepper. Spread on 1 tray and roast for 20-25 minutes, flipping halfway.
Meatballs: In a bowl combine 200g beef mince, 1 tsp crushed garlic, 1 tsp oregano, 1 tsp cumin, 1 tsp salt and 1 tsp pepper. Roll into bite sized balls, and lay on the second baking tray. Bake for 15 minutes, until golden and cooked through.
Salad: Dice ⅓ cucumber, 1 tomato and add to a bowl. Crumble over ½ block of feta, drizzle 1 tsp olive oil and 1 tsp salt. Mix well and set aside.
Assemble: Spread hummus over a large plate. Drizzle with olive oil and 1 tsp paprika. Pile roasted vegetables, meatballs and cucumber salad on top. Scatter with fresh mint leaves. Serve with warm flat bread.
