Herb, lemon & garlic steak on rice

Ingredients
1 cup white rice
2 pieces of steak
1 tbs olive oil
1 lemon
2 tsp salt
1 avocado
1 cup baby spinach
1 handful fresh coriander
1 handful fresh mint
2 tbs canola oil

Directions
Cook rice: Cook 1 cup of white rice.
Steak: In a bowl, combine 2 pieces of steak with 1 tbs olive oil, juice of 1 lemon, 2 tsp salt. Mix well and set aside.
Toppings: Slice 1 avocado into thin strips. Finely dice 1 cup baby spinach. Dice 1 handful fresh coriander and 1 handful of fresh mint.
Cook steak: Heat a large pan to high heat and add 2 tbs canola oil. Cook steak for 2-3 minutes per side, or until cooked to desired level. Remove & rest before slicing.
Assemble: Mix cooked rice with spinach, herbs, juice of 1 lemon and 1 tsp crushed garlic. Plate up rice and top with steak and avocado.
