Korean inspired meatballs

Ingredients
1 cup rice
300g beef mince
1/4 cup breadcrumbs
1 egg
1 sprig of spring onion
2 tsp crushed garlic
1/4 tsp salt
1/4 tsp black pepper
1 tbs soy sauce
1 tsp sesame oil
1/4 cup mayonnaise
1 tbs sriracha
2 tsp soy sauce
2 tsp sesame oil
1 small cucumber
1 tsp crushed garlic
Sesame seeds & sliced spring onions, for garnish

1 tbs sriracha
2 tsp soy sauce
2 tsp sesame oil

1 tsp crushed garlic

Directions
Rice: Cook 1 cup of rice.
Meatballs: Preheat the oven to 200ºC fan bake. Line a large tray with baking paper. In a bowl, mix 300g beef mince with 1/4 cup breadcrumbs, 1 egg, 1 diced spring onion, 2 tsp crushed garlic, 1/4 tsp salt, 1/4 tsp pepper, 1 tbs soy sauce and 1 tsp sesame oil. Roll into golfball sized balls and spread out evenly on the prepared tray. Place in the oven and cook for 12-15 minutes, flipping halfway.
Salad & sauce: In a bowl, combine 1/4 cup mayonnaise with 1 tbs sriracha, 1 tsp soy sauce and 1 tsp sesame oil. Taste and adjust seasoning if needed. In another bowl, add 1 small diced cucumber and coat with 1 tsp soy sauce, 1 tsp crushed garlic & 1 tsp sesame oil. Set aside.
Serve: Plate up the cooked rice, add meatballs and top with the spicy mayonnaise and cucumber salad on the side. Finish with sesame seeds and fresh spring onion.
