Ingredients
1 tsp olive oil
1 onion
1 carrot
200g beef mince
1.5 tsp salt
1.5 tsp pepper
1 tsp mixed herbs
1 tin crushed tomatoes
1 tin black beans
1 tsp paprika
1 tsp brown sugar
1/2 tsp beef stock powder
1 avocado
1 red onion
1 tomato
1 tsp lemon juice
200g nacho chips
1 cup grated cheese
1/2 cup sour cream

Directions
Mince: Heat a large pan to medium heat and add 1 tsp olive oil. Dice 1 onion and grate 1 carrot. Add carrots and onions to the pan, sauteeing for 2-3 minutes. Add 200g beef mince, 1 tsp salt, 1 tsp pepper, 1 tsp mixed herbs and mix well. Cook for 5 minutes until the beef is cooked through. Add 1 tin of crushed tomatoes and 1 tin of rinsed black beans. Add 1 tsp paprika, 1 tsp brown sugar and 1/2 tsp beef stock powder. Mix well, then reduce the heat to low and let simmer.
Guacamole: In a large bowl, mash 1 avocado. Dice 1 tomato and 1 red onion, setting aside 1/4 of each for toppings. Add the tomato and onion to the avocado, along with 1 tsp lemon juice, 1/2 tsp salt and 1/2 tsp pepper. Taste and adjust seasoning if required.
Chips: Heat the oven to 210C grill. Lay your chips on a plate and cover with 1/2 cup grated cheese. Pop the plate in the oven for 2-3 minutes, or until the cheese has melted. Carefully remove from the oven.
Finish off: Load the chips up with mince, guac, diced tomato & onion and finish with sour cream.
