Ingredients
2 large chicken thighs (boneless)
3 tbs soy sauce
3 tsp canola oil
2 tbs oyster sauce
1 tbs fish sauce
½ tsp white pepper
1 tbs sugar
300g thick rice noodles
3 tsp crushed garlic
2 eggs
1 broccolini
50g bean sprouts
Lime juice & crushed peanuts to serve

300g thick rice noodles

1 broccolini
50g bean sprouts

Directions
Chicken: Chop up 2 chicken thighs into small pieces and marinade in 2tbs soy sauce for 5-10 minutes. Then, heat up a large pan with 3 tsp canola oil to a medium-high heat. Add the chicken and cook until the chicken is about 80% done, then remove. While the chicken is cooking, make the sauce by mixing 2 tbs oyster sauce, 1 tbs soy sauce, 1 tbs fish sauce, ½ tsp white pepper and 1 tbs sugar in a bowl.
Noodles: Cook your noodles as per the instructions on the packet, and leave them to the side.
Finish your dish: Once the chicken has been partially cooked & removed, add 3 tsp garlic to the pan with 2 eggs. Mix the eggs in the pan, and add the stems of the broccoli and the cooked rice noodles. Char the noodles in the pan and then add the par-cooked chicken & sauce and cook for a minute. Add the broccoli heads and bean sprouts and stir for 30 seconds.
Serve: Assemble by plating up your noodles and top with lime juice and crushed peanuts.
