Smashed burger loaded fries

Ingredients
2 large potatoes
1 tsp olive oil
2 tsp salt

Directions
Fries: Preheat the oven to 200C fan bake and line a large baking tray. Peel 2 large potatoes and chop into shoestring fries. Assemble on the tray and season with 1 tsp olive oil, 1 tsp salt and 1 tsp pepper. Bake for 25-30 minutes.
Vegetables & sauce: Finely dice ½ lettuce and 1 tomato. Make burger sauce by combining 2 tbs tomato sauce, 1 tbs mustard, 1 tbs mayonnaise, 1 tbs pickle juice and 2 chopped pickles. Taste sauce and adjust sauce quantities if needed.
Mince: Season mince with 1 tsp salt and 1 tsp pepper. Preheat a large pan to high heat, and add 1 tbs canola oil. Fry mince for 5-6 minutes until crispy.
Assemble: Plate up cooked fries and cover with 50g grated cheese and the crispy mince. Pop in the oven to melt the cheese. Top with chopped lettuce, tomatoes, and sauce. Enjoy!
