150g beef mince
1 tsp mixed herbs
1 tsp cumin seeds
1 tsp salt
1 tsp pepper
⅓ leek
1 cup baby spinach
2 tsp crushed garlic
Directions
Dough: Preheat your oven to 220°C fan bake and line a tray with baking paper. In a bowl, mix 1 cup self-raising flour, 1 cup yogurt and 1 tsp olive oil. Stir until it comes together, then knead briefly on a floured surface until smooth. Roll out into a rough pizza shape (about 0.5–1cm thick) and place onto the tray. Pop in the oven for 5-8 minutes to par-cook.
Cook the toppings: Heat 1 tsp of olive oil in a pan. Add 150g beef mince, season with 1 tsp salt, 1 tsp pepper, 1 tsp mixed herbs and 1 tsp cumin. Cook until browned and broken up. Finely dice ⅓ leek. Add to the pan and then add 1 cup baby spinach. Add 2 tsp crushed garlic and mix everything together. Cook for 2-3 minutes until everything is soft and combined.
Assemble the pizza: Lightly brush the pizza base with olive oil. Scatter the beef, leek, and spinach mixture evenly over the base. Crumble over feta and sprinkle with mozzarella.
Bake: Bake for 12–15 minutes until the crust is golden and the cheese is bubbling. Garnish with a drizzle of Greek yogurt & fresh dill or mint if you like. Serve with lime wedges to squeeze over the top for extra zing!
