Steak & chimichurri loaded fries

Ingredients
3 large potatoes
2 tsp olive oil
3 tsp salt
3 tsp pepper
300g scotch fillet steak
3 tbs canola oil
2 small onion
1 large capsicum
1 tbs butter
1 tsp brown sugar
50g grated cheese
1/4 cup olive oil
2 tbs white wine vinegar
1 tsp crushed garlic
1/2 tsp dried oregano
1/2 cup chopped fresh parsley
2 tsp olive oil

300g scotch fillet steak
3 tbs canola oil
2 small onion
1 large capsicum
1 tbs butter
1 tsp brown sugar
50g grated cheese
1/4 cup olive oil
2 tbs white wine vinegar
1 tsp crushed garlic
1/2 tsp dried oregano
1/2 cup chopped fresh parsley
Directions
Fries: Preheat the oven to 200º C fan bake. Rinse and chop 3 large potatoes into thin fries. Coat with 1 tsp salt, 1 tsp pepper and 2 tsp olive oil. Add to a lined baking tray and cook for 30-35 minutes, flipping halfway, until crispy.
Prepare chimichurri: Mix 1/4 cup olive oil with 2 tbs white wine vinegar, 1 tsp crushed garlic, 1/2 tsp dried oregano and 1/2 cup chopped fresh parsley.
Cook onions: Finely slice 2 small onions and 1 capsicum. Preheat a large pan to medium heat and add 1 tbs canola oil. Add the sliced onion & capsicum and cook for 2 minutes, then add 1 tbs butter and 1 tsp brown sugar. Continue cooking for 5-6 minutes, stirring frequently. When soft, remove from the pan.
Cook steak: When fries have 10 minutes left, bring the pan to a high heat. Cook the steak for 3-4 minutes per side, adjusting based on thickness. Remove and let the meat rest, then slice.
Finish off: Once fries are cooked, turn the oven to grill on the highest setting. Add the cooked onions/capsicum on top of the fries and sprinkle with 50g grated cheese, then return to the oven for 2-3 minutes to melt the cheese. Once cheese has melted, assemble the fries by piling up the chopped steak and topping with chimichurri. Enjoy!
