Ingredients
2 pieces of steak
4 tbs olive oil
1 tsp ground cumin
1 tsp smoked paprika
2 tsp salt
2 tsp pepper
1 white onion
1 red capsicum
1 courgette
6-8 small tortillas

Directions
Marinate steak: Rub steak with 1 tbs olive oil, 1 tsp cumin, 1 tsp paprika, 1 tsp salt, and 1 tsp pepper. Set aside at room temp while you prep everything else.
Cook the onion, capsicum & courgette: Heat a large pan over medium heat with a 1 tbs olive oil. Slice 1 onion, 1 capsicum and 1 courgette. Add to the pan, season with 1 tsp salt & 1 tsp pepper and cook for 6–8 minutes, stirring occasionally, until soft and slightly charred. Set aside.
Cook the steak: In the same pan, cook the steak over high heat for 3–4 minutes per side for medium-rare. Let rest for 5 minutes, then slice thinly against the grain.
Finish off: Warm tortillas briefly in a pan or microwave until soft and warm. Top tacos with sliced steak, cooked onion, capsicum and courgette. Serve with mayonnaise, if desired.
