Steak & grilled corn salad

Ingredients
2 pieces of steak
2 tbs olive oil
1 tsp crushed garlic
1 tsp lemon juice
2 tsp salt
1 cup rocket/baby spinach or lettuce
¼ cup dressing of choice
¼ cup chopped fresh chives
1 avocado
1 corn (or ¾ cup frozen)
1 tbs butter
3 tbs canola oil
20g feta cheese
1 red onion
2 tbs olive oil

1 cup rocket/baby spinach or lettuce
¼ cup dressing of choice
¼ cup chopped fresh chives

1 corn (or ¾ cup frozen)
1 tbs butter
3 tbs canola oil
20g feta cheese
1 red onion
Directions
Steak: Marinate 2 pieces of steak in 2 tbs olive oil, 1 tsp crushed garlic, 1 tsp lemon juice and 2 tsp salt. Mix and set aside.
Salad: Grab a large bowl and add 1 cup rocket/baby spinach/lettuce. Dress with ¼ cup of your favourite dressing, we used avocado & garlic. Add ¼ cup chopped chives and 1 sliced avocado. Mix well and leave to the side.
Corn: If using fresh corn, peel the husks away and carefully slice the corn kernels off the cob, and add to a pot. If using frozen corn, just add them directly to a small pot. Add 1 tbs butter to the pot and bring the heat to medium and let the corn cook with the butter. Continue cooking, while stirring frequently, until the corn begins to char. Remove and add to the salad.
Cook steak: Bring a large pan to high heat and add 3 tbs canola oil. Cook steaks for 2-3 minutes per side, until cooked to desired level. Remove from the heat and let rest for 2 minutes, then slice
Assemble: Add cooked steak to the salad and toss well. Finish with crumbled feta and sliced red onion.
