Ultimate Loaded Wedges

Ingredients
1 bag frozen wedges (or 2 large potatoes if you’re making them from scratch)
200g bacon
1 capsicum
1 onion
½ cup frozen corn
1 tsp pepper
1 tsp mixed herbs
1 cup grated cheese
4 tbs sour cream
4 tbs sweet chilli sauce

Directions
Wedges: Preheat the oven to 200C fan bake and line a large baking tray. (Pre-made frozen wedges are suggested purely for taste, but if you want to make your own - slice your potatoes into thick wedges, spray with oil and season with 1 tsp salt, 1 tsp pepper and 1 tsp garlic powder, then cook). Evenly spread wedges on the oven tray and bake for 25-30 minutes, flipping halfway, until crispy.
Toppings: Heat a large pan to high heat. Dice 200g bacon into chunks. Add to the pan and cook until the edges crisp up. Meanwhile, dice 1 capsicum and 1 onion and add to the bacon. Add ½ cup frozen corn and mix well. Season with 1 tsp pepper and 1 tsp mixed herbs. Remove from the heat and set aside.
Assemble: Once wedges have cooked, swap the oven to grill. Add the wedges to an oven-safe dish and top with the cooked onions/bacon/corn/capsicum. Finish with grated cheese and grill until the cheese bubbles. Top with sour cream, sweet chilli and sliced spring onion.
